Lemon curd is an amazing thing.
I love it in cheesecake, tarts and on toast the most. My kids love eating it straight from the jar.
Today I made my lemon curd to go with my children’s christmas gifts to their teachers.
This is a very easy and quick recipe to make.
4 egg yolks
330g castor sugar
6 150ml jars (if using as gifts)
Whisk eggs, yolks and sugar in a medium saucepan.
Add butter, lemon zest and lemon juice.
Place on low heat and stir till butter is melted and sugar dissolves.
Using a whisk continue stirring until mixture thickens, about 5 mins.
Do not boil.
The mixture will more as it cools.
Remove from heat and pour into sterilized jars and seal tightly with the lid.
Place a label on the jar and decorate with ribbon.
