I was lucky enough to successfully grow 1 cauliflower, I did plant 5 in my veggie garden, and had only one that was successful. I was proud of this cauliflower, yes I had 4 that didn’t grow but 1 was better than none. The success rate of my broccoli was much higher and we have been able to enjoy numerous heads of broccoli. The same can be said for the spinach and kale in this recipe, there is an abundance of bother, which is great. Finding uses for them a little harder, especially when feeding children. However today is all about my cauliflower, I wanted to make something that was enjoyable, not boring and not too over the top that it would take away from the flavour of my one successful homegrown cauliflower.
The result is this simple yet yummy stir fry, that can ultimately be used many ways, I used it as a side for my chicken, you could also stir through some cooked brown rice and top with some steamed or barbequed chicken as a full meal. It is also great cold as a salad.
